Wilbur rightyo. This is the recipe I use:

Makes 4.

1 + 1/4 Cups plain flour
1 pack fast acting yeast powder
1/2 teaspoon salt
1/2 cup hot water
2 teaspoons olive oil

Mix flour, yeast and salt together. Add water and oil. Knead for 5 mins. Roll into a ball. Cover with a towel for 10 mins. Pre hear dry skillet or frying pan. Cut ball into 4. Roll each one nice and thin. Place in hot pan and let the bread bubble up (a min or so each side). You can add garlic or onion powder to the dry ingredients. They will keep for a day wrapped in foil.

We made these the other day - really simple and they were good: www.rivercottage.net/recipes/flatbreads

They were quite small (we use them for wraps with salad and marinated chicken) so next time we’ll double the ingredients and divide into fewer pieces.

If you have some sweet potatoes, we've made these a few times recently and they are delicious. Sweet potato flat breads And incredibly simple.

@Dogwithanovenmit Well these were a revelation! Thanks for the recipe, they were really lovely - had them with homemade humous (go me!) lettuce, tomato, cucumber and feta.

I'm not the best cook so I am feeling very smug! Thanks for all the other recipes too folks I think I'll be giving them all a try over the next few weeks.

Dogwithanovenmit here with a name change . So glad they came out well Wilbur. I’m not good at anything bread like and this was the recipe I’ve found most successful too. H1978 that recipe is v similar to the one I use but with some milk added too. Will def try that and see what difference adding milk makes.
