Coffee cake?

Can anyone share a fab coffee cake recipe?
Trying one shortly for a birthday cake and really hoping it will be a light fluffy number!

All tips welcome!

I usually just google a BBC one with walnuts. Also love coffee and cardamom cake. Can't recall a specific recipe though, sorry.

Just check the birthday person likes coffee cake! (apparently some people don't Shock)

Not sure if this link will work but it’s a recipe for coffee buns that I found on here. They aren’t really buns though - more like coffee fairy cakes with icing.
DS made them last week and I wasn’t expecting much but they were delicious!

Ooops, I think the link just shows a picture which is quite useless without the recipe!
Here it is...

Ingredients

125 g self-raising flour
150 g icing sugar
125 g sugar
3 tsp instant coffee
2 eggs
4 tbsp hot water
125 g butter

Method

Cream butter and sugar until light and fluffy.
Beat in the eggs one at a time.
Sieve and stir in the flour.
Melt 2 tsp instant coffee 2 tbsp hot water and stir it in.
Spoon into greased cupcake tin.
Bake for 12-15 minutes at Gas Mark 6 / 200C
For the icing: mix 2 tbsp hot water with remaining tsp of instant coffee, and then add it gradually to the icing sugar until you've achieved an easily spreadable consistency.
Spread the buns with icing and quickly top them with chocolate sprinkles before the icing hardens.

Handy Hint - The icing hardens quickly, so it's best to ice and sprinkle each bun in turn.

This one from Nigella’s Kitchen book is tge best ever: www.nigella.com/recipes/coffee-and-walnut-layer-cake though you must get instant espresso powder, not the usual kind of instant coffee. Available in largish supermarkets and lasts ages.

If you are not in a baking mood, Lidl have an utterly wonderful coffee and walnut cake. Light sponge, lots of delicious butter icing inside and on top. £1. 79 but often reduced to £1.40.

The only problem is they get snapped up quickly. However their Lemon Drizzle is also excellent, very lemony with crusty sugar top and lemon butter cream inside.
