What can I do with some chicken breast?

DH took 4 chicken breast out of the freezer last night rather than the 2 we needed for dinner tonight.

Ideas please on what to do with the other 2 or than chuck in the oven then slice and put on sandwiches tomorrow as this is about the level of my cooking skills.

Last night we had chicken breasts which I diced and fried up with onion, courgette, pepper and mushroom. Then I added pesto and had it with pasta. It was quick, easy and very tasty.

We're having diced chicken breast in quesadillas tonight. Just put the cooked chicken and cheese (and optional veg/sometimes bacon) in a folded over wrap and fry it in a pan with oil, and some sort of paprika or spice if you like spice.

We are having 2 of them tonight with one of those seasoning paper things and some potatoes. But they are really large so we only need 2 of them to feed the 4 of us (DS 3 and DD 1 won’t eat much).

The other 2 will have to be cooked today really as they have been defrosted now and so I need ideas as to what to do with them.

That’s a good idea for tomorrow thanks. I can cook the chicken tonight and if I can get hold of some wraps tomorrow this would work.

Dice the chicken breasts. Fry an onion, add diced chicken, mushrooms and sliced peppers (or not). Add some garlic. Once cooked add a chicken stock cube (or some bistro chicken) and boiling water - about half a cup. Add double cream and tarragon. Serve with pasta. Enjoy!

If freezing don’t add cream. Add that once defrosted and reheated.

Cook tonight then chop into a curry sauce or into a sauce with pasta or noodles. Stir fry with lots of seasoning and veg, put into an omelette, serve in flour tortillas with salad,

Cut slits in the top, plaster with barbecue sauce mixed with some olive oil, mixed herbs and ground black pepper, marinade for a few hours then stick in the oven. Refrigerate when cold and have with salad tomorrow.

They don't need cooking today just because they have been defrosted? They will have been frozen at the time they were butchered so will be fine in the fridge for a couple of days and you can cook them another day

@whensmynexthol1day I froze them myself when we got them from the butchers and can’t remember whether I did it same day (I think I did) or a day later so feel safer cooking them today.

I’ve just discovered that they haven’t defrosted fully yet anyway so they will stay in the fridge now until tomorrow night! Must have been late last night when DH took them out of the freezer.
