Quick clean/healthy meal ideas?

Has anyone got any meal ideas please? I'm in a rut with eating rubbish at the moment but I feel rubbish for it and really need to eat a bit better! Feeling quite lazy at the moment though so the quicker and/or easier the better! Thanks!

This is a list of cheap meals:

Sausage and potato casserole
Jacket potato
A healthy fruit or garden salad
Tuna pasta bake
Pizza
Soup of any kind
Risotto
Fish pie/cottage pie/shepherds pie
Smoked salmon
Curry
Sweet potato cakes

Jacket potato with salad and a filling eg. Tuna, beans, cheese etc

Salad with ham, boiled eggs and homemade coleslaw

Chicken salad wraps tortilla chips

Tuna or chicken pasta bake

Chicken and veg curry...throw in a slow cooker

2 egg omelette with ham and cheese plua salad

Iv been feeling the same so my list for the next few days is

Salad with beetroot and coleslaw with 3 heck veg sausages I might have a bit of bread if I'm not full

The other 3 veg sausages with couscous or some boiled potatoes

Vegetable soup with bread

Baked potatoes with a little cheese with salad beetroot and coleslaw

Sweet chilli halloumi bake in a bag (see picture) but I don't like peppers so I'm replacing them with peas, green beans and possibly broccoli served with couscous

Cheesy veg which is baked/roasted vegetables in cheese sauce (similar to macaroni but without the pasta)
Chop the same size cover with cheese sauce and bake in the oven until soft or roast the veg then cover with sauce just before serving.
Parsnip
Brussel sprouts
Carrots
Broccoli
Peas
Green beans
Or whatever veg you like but that's what I have in!

Oh and I have some falafel so I'll have them with pitta (if I can get them) and a bit of lettuce and sauce

It really is! The maggi packet is £1 in Tesco and it calls for lots of halloumi but I only had one block in so loaded more veg in (which means it's healthier) and spooned it over cooked couscous straight from the bag once it had come out the oven and it was so so good!

You could do similar by making your own marinade and cooking it in tin foil package similar to how you do fish but at £1 for the packet it doesn't break the bag.

My go to quick healthy meal is a fillet of salmon, or mackerel cooked straight from frozen, a bag of microwavable grains, steamed veg. Then I chuck on some chilli sauce (cholula brand) - not the cheapest I admit!

I also saw a cheaper recipe online which I'm gona try which is just tin of three bean salad, tin of fish and then chopped red onion. Will probably serve with steamed veg again.

Or pasta with a simple tomato sauce?

Oooh @deathb4decaf I am eating that in bed right now, tin of tuna, mixed beans, chick peas, chopped tomatoes and red onion and a red pepper mixed with lemon juice, EV oil and salt and pepper. Tis yum.

This is a good thread, I need cheap meal ideas but really struggle in better weather as all my cheap meals are a variation of cheese/egg/cheese/potato/cheese Wink

A good favourite in our house tabbouleh and serve with falafels/mackerel etc. Bulgar wheat, tomatoes, cucumber, mint, parlsley, oil and lemon etc.

Rice salad
Pasta salad

Lots of variations of the above. I like the GoodFood website.

PS how can smoked salmon be a cheap meal?!

All our food is based on the following liquid. To this we add mince and white beans and serve with rice OR Fish and noodles. Its transformed our lives. Meals are quick and very cheap(once you start using the ingredients daily) and you can make different variations of the dish. So here goes. Into a blender you put :
Ginger
Turmeric
Garlic
Onlion
Spinach(optional)
Celery
A stock cube
Boiling water
Dash of honey
Fish sauce
Blend together and cook in a big pan. Add frozen fish or meat or frozen veg or noodles and boil up for 10/20 mins.
Trust me...... Its delicious. Kids love it too.

Spaghetti and meatballs. Can be really simple, fry onions and then simmer down some passata, a tin of tomatoes, bit of beef stock and the meatballs which you can make just from mince.

Jacket potatoes

Pasta, pesto and cheese.

There’s a nice baked risotto on the bbc good food website.

Cheese and potato pie.

Slow cooked anything. I buy the bags of casserole veg which are about 75p.
