It's dps birthday and I had planned caramel shortbread but alas. The shortbread went to pot. Tasty, but it collapsed. 🙄

So I have 2 tins of condensed milk, two chocolate bars, butter, a jif lemon, syrup, a pot of double cream, and digestive biscuits. I picked up a pack earlier thinking I could cobble together a cheesecake.

So I was thinking of some description. But what ? 🤔

Have you tried fudge? I made a nice chocolate fudge with chocolate, condensed milk and icing sugar?

I make cheesecake with soft cheese, double cream, usually chocolate and digestives with butter so I'm not much help sorry!!!

Chocolatecake12 · 11/04/2020 19:37

Digestive biscuits crushed with melted butter for the base
Make a chocolate mousse with the cream and chocolate and put on top of the base.

there's a recipe for lemon bars doing the roundds on fb...it was crushed digestives for a base, lemon juice, egg yolks and a tin of condensed milk for the filling, and into the oven with it for about 15 minutes I think

I thought i might do that and fancy it up with weeny little meringues on each square

it's very similar to a quick lemon meringue pie recipe i had, I'll see if i can find it

SconNotScone · 11/04/2020 19:45

Do you have any bananas? If so, you could make banoffee - crushed biscuits and melted butter for the base, condensed milk boiled into caramel, layered with sliced banana, whipped double cream on top, finished with grated chocolate.

LaurieSchafferIsAllBitterNow · 11/04/2020 19:49

this is very similar....you could sub ordinary sugar for the brown

Lemon Bars

Otherwise you could do a chocolate caramel tart....This one is a family favourite you could sub the digestives for the oreos...maybe a little more butter to hold the crumbs and again you can sub normal sugar for the brown.

WhatWouldYouDoWhatWouldJesusDo · 11/04/2020 19:51

I was thinking banoffee too.

Or maybe a cobbled caramel shortbread using digestives as the base 🤔

I insist!!!

Lemon cheese cake.

No bake.

Dead easy.

Promise!

Just the tins of condensed milk, the double cream. The lemon juice will seize it all together!

bloodywhitecat · 11/04/2020 19:54

I'd do this Millionaire's shortbread using digestives instead

bloodywhitecat · 11/04/2020 19:55

Here's one that uses digestives

WhatWouldYouDoWhatWouldJesusDo · 11/04/2020 20:00

Oh I'm conflicted. 😭😭😭

I'm even thinking a banoffee but with chocolate melted over the banana layer then topped with cream. Or is that going too far ??

OP posts:
SconNotScone · 11/04/2020 20:03

Do the banoffee!! My only concern would be the chocolate forming a bit of a rock solid layer once it hardens. But it would be delish!

HasaDigaEebowai · 11/04/2020 20:06

millionaire's is much nicer with digestive and butter base. The saltiness offsets the caramel perfectly. Its too sweet with shortbread.

WhatWouldYouDoWhatWouldJesusDo · 11/04/2020 20:08

Oh it would.

Pressure is on, this is my first pandemic cake 😭😭😭

OP posts:
KittenVsBox · 11/04/2020 20:09

I'd crush the shortbread, stick together with butter, and carry on with millionaires shortbread, which is a trillion times nicer than any of the other suggestions (I'm not a cream fan)

WhatWouldYouDoWhatWouldJesusDo · 11/04/2020 20:13

Kitten the shortbread vanished in a flurry of taste testing Blush

WhatWouldYouDoWhatWouldJesusDo · 11/04/2020 20:13

Right. I'm going in. Going to crush the biscuits and see where my brain takes me

OP posts:
Bakedpotatoandgin · 11/04/2020 20:16

Make ice-cream from the cream and condensed milk. Make a biscuit base with the digestives and maybe some of the shortbread. Stick the ice-cream on the base in the tin, swirl through some caramel sauce, freeze. Melt the chocolate, pour on top, freeze. Chocolate caramel ice cream cake!

lifeisgoodmostofthetime · 11/04/2020 20:34

Chocolate tart

Biscuits
Butter
Double cream
Syrup
Chocolate

SconNotScone · 11/04/2020 21:48

What did you make in the end @WhatWouldYouDoWhatWouldJesusDo ?

WhatWouldYouDoWhatWouldJesusDo · 11/04/2020 22:01

Scon I went for caramel shortbread type using digestives as.the base. I wanted to make a banoffee but no bananas.

So gone for that, I'm going to top it with a chocolate orange bar and I've raided the sweets so I can spell out a few age appropriate insults 😂😂😂

OP posts:
WhatWouldYouDoWhatWouldJesusDo · 11/04/2020 22:01

And I burnt myself 3 times making the caramel 🙄
