Easter lunch help needed!

I was going to do roast shoulder of lamb but dh went to get it and had it cut into small pieces....not sure what to do with it now! Any ideas? Can I still roast it or would it be better to do something else? Thanks.

I would do a lovely, long, low, slow cooked casserole.

Make lamb Navarin, it’s a lovely Spring dish, extremely suitable for Easter, and all the sides you were going to serve with your roast will go well with it too.

I agree with Navarin. I've made the below recipe many times.
Adapt to whatever root veg and onions you have. With shoulder it will need longer cooking before putting the veg back in. The sauce is lovely
