How to make vegetarian gravy?

Any suggestions? We’re self isolating and have no bisto. DD is vegetarian. I want to do a roast of sorts for Easter (only have chicken breasts though as running a bit low on food- Sunday will be day 14 for DH but he’s not well enough to shop, and only day 5 of symptoms for me). What can I use to make gravy or a substitute? Very limited ingredients left (stock cubes, plain flour, herbs, spices etc)

Bistro beef flavoured is vegetarian. Look for logo.

Chicken one isn’t, so we tend to have beef gravy with everything.

Slice an onion and caramelise it in a pan with a bit of oil and sugar, add in rosemary and thyme (dried), once onions start caramelising add a tablespoon of plain flour and mix, add a little balsamic vinegar, cook for a few seconds add vegetable stock (using stock cubes), bring to boil, turn down heat and allow to simmer till it all reduces s bit then I blend the lot using a hand held blender.
