Inspire me - Easter Sunday meal

My dad and his wife were due to come over next Sunday and I had planned to cook some lamb shanks that are in my freezer as I picked them up reduced a little while back. They will now not be coming, and I plan to cook one for myself but what to do for my husband and children, who don't eat lamb.

What do you have on Easter Sunday?

I'm looking for something 'special occasion' without being too fancy, ideally, but a little bit different from the usual weekly roast

We were planning on making lamb koftas with Greek salad, tzatziki, olives and flatbreads... Only asda substituted the lamb mince for beef, so beef koftas it is I suppose! Can't complain, I'm just glad the delivery turned up.

We've got an absolutely enormous joint of pork in the freezer as DH's parents were supposed to be coming for Easter and now, obviously, aren't. So I guess we'll have that and then eat leftover pork for the next week 🐽
