Scones...do you put eggs in yours?

I use the Bero book recipe which does use egg, but Good Food have a recipe without egg here www.bbcgoodfood.com/recipes/classic-scones-jam-clotted-cream (you can brush with milk instead of egg)

Yes in times of plenty- not when eggs are scarce (just extra milk to replace the egg)

Never. Rub fat into flour and a wee bit of sugar, mix into dough with milk. Egg only to birch on top to glaze.

No, never have. I’ve been baking scones for 45 years!! My aunt taught me when I was tiny. I use her recipe.

No, if there are eggs (except maybe to glaze) in the recipe then they aren't scones.

We made scones for the first time this week using the Mary Berry recipe and I have nothing to compare it with but they are amazing!

I used not to put egg in. Then I suddenly lost the knack, somehow. Tried Delia's recipe, which has an egg and quite a lot of butter.

8oz SR, 3oz butter, 1 egg, possibly a little milk. When cutting into scones, don't twist the cutter but press it straight down. Dust the top with a little flour to keep the steam in (or glaze with egg). 15 min at 200 C or gas 6.

I make cheese scones, I have all the ingredients, plus cheese. I feel some baking coming on...

I usually use the Bero plain recipe without eggs, but when times were hard I used to make the Bero Rich recipe (no sugar) and use the dough as a quick pizza base, probably sacrilege I know! Wink
Yeast wasn't always easy to find years ago, and the scone/pizza base used to give a finished pizza very like a deep pan pizza. None of the children it was served to ever complained!
