Roast beef

Hi all,

Yesterday I did a beef joint as it needed using up. We have at least 2 more meals that we could make out of it.
Could I have suggestions about how long you keep it in the fridge and what would you make with it?

I live alone so have a fair bit left over if I cook a beef joint and after I've had it cold with salad and bubble & squeak the following day and a bit left for sandwiches, I then slice the rest of the joint, and freeze in portions in gravy in the freezer.

I'm a really boring eater so hope someone comes along with more exotic ideas for your left over beef.

Hugh FW leftovers cottage pie is great, if you save the gravy. He also has a crispy beef stir fry in his left overs book too. Both good.

4 or 5 days, quite easily (if stored correctly) You can also freeze some if you want to be on the safe side and have the room.

Here is a thread I started, all about suggestions and ideas for menus/leftovers/avoiding waste, if you want to have a look:

You could either reheat gently in gravy and have a roast dinner again, or cook down onions/mushrooms/carrot and other root veg, add gravy and make a pie (potato topping or pastry), or make individual pies/pasties, or maybe have it cold with celeriac/carrot/cabbage/red cabbage/apple/etc coleslaw or remoulade. Bread and butter on the side would be ideal, since roast beef sandwiches are so yummy!

Otherwise slice into thin pieces, add an Asian marinade (homemade or bottled), heat gently and serve on top of rice or noodles, with or without broth, possibly with half a soft boiled egg and a selection of fresh veg cut very thinly.

You could also fry it up with whatever salad veg you have and some tex mex spice, and have it in wraps.

I did a thing where I made a sauce with onions, peppers. tomatoes, beans and Mexican spices, lime, coriander etc and mixed in leftover beef. Shoved it in a dish, topped with tortilla chips and cheese then flashed it under the grill. Topped with some avocado and sour cream.

It is Tesco Mexican turkey pie recipe but works well with any leftover meat.
