What foods are you eating?
I feel I'm gaining weight. I'm snacking on gluten free biscuits at any chance. Other than that I am having potatoes with beans or eggs with beans or gluten free cornflakes.
I made gf soup a couple of weeks ago and I've had some tuna jacket potato but I feel restricted. I dont know if it's me not being creative enough and too exhausted to knock up anything fancy.
Are you finding it difficult to eat healthy due to isolation or lack of food options etc.
Please tell me how you are managing isolation with this condition.

DH has been eating soup, salads, oven chips, roast chicken, steamed veg, different types of risotto, stir fries, chicken traybakes, fish. Snacks of fruit, peanut butter, crisps. He has had the occasional home-made cake and might have home-made bread this week if I get the chance to make some.

Troels · 01/04/2020 19:56

I've stopped buying the GF snacks like biscuits as I'm piling on weight too.
I got the Coeliac UK app for the phone joining costs £12 a year and it's well worth it. I buy lots of store brand foods that are GF but not advertised as such.
I also joined the facebook group they put out lots of recipes
www.facebook.com/groups/Gloot/ and are very knowledgable

damnthatanxiety · 01/04/2020 19:58

OP I'm not really understanding your diet. I just eat normal food. If you are hoovering up cookies and potatoes then yes, you will gain weight. Coeliac or not, just eat normal food. Vegetables, meat of you choose, eggs, salads, soups... you know. Normal food.

Thank you for the reply. I'll try some of those. I'm so new to this. I had it planned in my mind how I was going to handle this but then lockdown happened. I will say though, I've not (in my knowledge) eaten anything with gluten in so I'm trying hard to stick to it and not revert back to eating gluten.
All/any suggestions at all are welcome.
Thanks

What type of meals did you have before going gluten free?
When I was diagnosed I struggled for a couple of weeks but I've found my groove now and replacements that I enjoy, so I eat pretty much the same as I used to now that I've found a bread (schar vitality load is amazing) pizza bases, pasta etc that I like

VeryShortNotice · 01/04/2020 20:02

My DS has coeliac disease. He’s eating loads right now (I suspect a growth spurt, as he’s 10 but eating more than DP). Here is some of what he’s been eating:

Today

  • breakfast: bacon sandwich with milk
  • lunch: chicken sandwich with an entire pack of cherry tomatoes (that I was going to use for something else), grapes and raspberries
  • dinner: roast chicken with chips, broccoli, asparagus and a tomato, pepper and chorizo sauce. Flapjack for dessert.

Yesterday

  • breakfast: yoghurt, raspberries and milk
  • lunch: lentil soup with bread
  • dinner: pork in cider sauce with apple, fennel, green beans and roast potatoes. Flapjack for dessert.

Sunday:

  • breakfast: GF waffles
  • lunch: cheese and ham toastie with loads of fruit
  • dinner: teriyaki haddock, egg fried rice and salad.
Historyofeverything1 · 01/04/2020 20:03

Ds is enjoying chilli, spag bol, BLT, pizza, Shepherds pie, curries, toad in the hole, soups, fish finger sandwiches.
For snacks fruit, rice cakes, brioche, homemade almond or oat biscuits.
Rice pudding, fruit and custard.
I'm struggling to get cereals as tesco have really reduced there range. A few other bits we normally have have not been available (pasta and bread).

Anthilda · 01/04/2020 20:04

But how can I get normal food when theres (hardly)nothing in the shops for me.? I ventured out today n tbh i just wanted to get in and out i was so anxious. I didn't feel i had time to browse because there was a que of people waiting to get in the shop.
Ideally i wanted chicken and fresh fish but there was none.

I definitely need to stop with the cookies, I agree. Its just boredom. I'm stuck in, as are most people and I am eating crap!

I never ate cereal for a long time but now I am. I like fresh fish, fresh chicken, salads, thai food. I love eggs and I'm having those with beans for breakfast
I like to eat healthy in general and can take or leave bread and pasta

Anthilda · 01/04/2020 20:07

Thanks for that @VeryShortNotice

So, are you coeliac or gluten intolerant?

CaryStoppins · 01/04/2020 20:10

I eat porridge, potatoes, beans, tuna, lots of rice, lentil crisps, those crimble macaroons and lots of wine. I am becoming very fat tbh.

Anthilda · 01/04/2020 20:10

@Troels I signed up to coeliac uk and I find it quite useless, unless i am just not familiar enough with it yet?
I am not on sm so cannot access Facebook groups Sad

Lots of gf foods are packed with sugar. I don't like the free products so I just do without. You don't need bread etc. The only gf product I eat is pasta X

pastabest · 01/04/2020 20:12

We are a gluten free household and to be honest we eat pretty normally.

Typical meals are
Shepherds/ cottage pie
Mince and boiled potatoes
chilli and rice
Meat and veg (tonight we had Barnsley chops with roast Mediterranean veg and fried potatoes)
Sweet and sour chicken/ lamb curry etc wth rice
Lasagne (just use gluten free pasta sheets, most pasta and cheese lasagne sauces are gluten free anyway)
Spaghetti Bolognese (with gluten free pasta)
Risotto
Stir fries using rice noodles
Sausage and mash (most supermarket sausages are gluten free now)
Roast dinners (just use cornflour for Yorkshire's and gravy, or buy the gluten free versions)
Chicken and Chips
Asda and M&S do good chicken goujons/ southern fried chicken steaks.

Bread for sandwiches from M&S or Wheatfree Bakery (online). M&S Cheese and onion pastries and spring rolls are delicious.

For quick ready meals Morrison's do great gluten free pizzas both on the fresh counter and in the gluten free freezer, garlic bread in the freezer and various other bits.

Heinz tomato soup is gluten free, as are most of the Covent Garden soups.

Join the coeliac groups on Facebook if you haven't already.

I make toasted cheese sandwiches using the Asda or Wharburton gluten free thins. Also hood for toasting and having with dips/ houmous.

Anthilda · 01/04/2020 20:15

@CaryStoppins I feel you, it's difficult atm but feel if I could get out and about as normal I can get the things I really want, like some fresh fish for example Sad

@Winesalot I'm coeliac. I'm in agony atm actually and still feeling the symptoms, especially fatigue and joint pain
With children here, I'm just too exhausted to stand and cook anything creative.

I am Coeliac and I eat pretty normally. Lots of rice, GF pasta, potatoes, meat and veg. I’ve not struggled to get anything really

Anthilda · 01/04/2020 20:17

@pastabest thank you, I can keep coming back to this thread and look at the lists/choices you all have.

I used to be really active, running/gym. Now I'm just so tired. ALL.THE.TIME!!

How long until people seen improvements?

It’s easier to get frozen fish and chicken in the supermarkets at the moment. Just defrost it and use as you would have.

The best thing to do (I find) is to stick to all the naturally GF foods. DS eats loads of rice and potatoes done in lots of different ways. And I just make him eat vegetables. He eats a lot of yoghurt for breakfast. I haven’t had a problem getting veg or dairy stuff at all. Or GF bread tbh (flour, on the other hand, is impossible to come by).

I don’t buy all that much in the way of ‘free from’ aisle food. GF bread (he likes warburtons) and flour mostly. The occasional frozen pizza (the Sainsbury’s ones are alright).

Tbh, snacking out of boredom is a danger for many of us right now anyway. So maybe think if something to do to divert you when you’re heading for the snack cupboard.

Anthilda · 01/04/2020 20:23

@Troels I've just had an idea. I could ask my sister to join the fb group and browse through when I see her.

gluten free fajitas (keep a pack in my cupboard when I see them) dh & I shared it we did it with guacamole (we had one avocado left in fridge got them unripe about 3 weeks ago! along with an ancient lemon) sliced tomato half an onion with a dash of mint sauce as a side salad. used mince threw in mixed beans & a frozen chilly & 2 frozen toms from last year) I will now spend the rest of the evening attempting to digest it (mint tea anybody???) we have been doing a hunt through the freezer & cupboard as we are running out of fresh veg

springydaff · 01/04/2020 20:31

What would you normally have cooked tonight if 1. You were coeliac and 2. We weren't going through a pandemic

What was your normal routine?

I swear that just a tiny bit of tweeking here and there and you're gluten free. It's so easy. You don't have to cooking anything fancy - promise!

Anthilda · 01/04/2020 20:31

@VeryShortNotice
I actually have gf flour, plain and sr. Plus other bits.
I made pancakes the other day and they weren't too bad.
I dont have a bread maker, I got those with the intention of making cakes and biscuits on a weekend Grin

I enjoy rice and potatoes but this is not my normal eating habits (aside from weekends which would involve curries or pizzas)
I wanted to eat fresh, low carb, gf.

I just felt unprepared today going to the shop.
I was stressed because I had a list (from various others I needed to buy for, plus myself) and i just wanted to make sure i had the list sorted and quick because people were too close for comfort.
In the freezer I am sure I have frozen salmon, I have a fresh broccoli and I have some gf stir fry sauce and rice noodles.
I can attempt something a bit healthier tomorrow.
I think maybe I'm just making excuses!
