What foods are you eating?
I feel I'm gaining weight. I'm snacking on gluten free biscuits at any chance. Other than that I am having potatoes with beans or eggs with beans or gluten free cornflakes.
I made gf soup a couple of weeks ago and I've had some tuna jacket potato but I feel restricted. I dont know if it's me not being creative enough and too exhausted to knock up anything fancy.
Are you finding it difficult to eat healthy due to isolation or lack of food options etc.
Please tell me how you are managing isolation with this condition.

I just eat what I have normally. I rareLy eat special Gf foods, just lots of veg / salad and protein - chicken, meat, eggs , cheese , fish. I add fat with butter, olive oils, nuts and yoghurt.

If I wanted more carbs I’d eat rice or potatoes and more fruit. Or Aldi’s own brand pringles which are GF. Or red wine.

I make my own paleo bread that’s GF, but I only have about two or three slices a week. Ditto GF pancakes ( mixture in fridge )

I’ve not had any trouble finding anything in the shops. The shortages seem to be pasta, jars and cans, which I don’t buy much.

On a weeknight, gf, I would have had baked vegetables, with some seasoning some baked cod
Or I would have had rice noodles with a stir fry.

Or maybe a big salad with chicken breast

I do lots of stuff like chickpea, sweet potato and spinach stews.

Sometimes do vegi chilli just with veg, no quorn

Am vegetarian as well btw.

But some of the recipes I use could easily be adapted. So add lamb to stews, chicken, etc.

I'm eating smaller portions than usual. I'm mainly veggie so jacket potatoes, lentilly things, gf pasta.

One biscuit for elevenses and one biscuit in the afternoon. Half a packet of crisps with lunch. Few nuts to keep me ticking over.

Anthilda, once you have joined they send you the book and it lists stores and has foods lited that are GF.
Lots of easy things to change like using Knorr stock cubes instead of OXO. Making sure you buy GF oats for porridge due to the cross contamination of regular ones. Galaxy chocolate like minstrels, but not a lot of Cadbury is safe. etc
Do you have a smart phone the app is free to download then you sign in same as on the online site for Coeliacs UK and you just scan the upc codes on boxes to see if you can have them. Some things you have to type the brand and name in and it pops up.
Get your sister to set it all up if you can, she can show you.

If you're missing fresh chicken and fish, have you checked to see if your local butcher or fishmonger deliver? That's what we've had to do because we can't get any supermarket slots.

How long have you been diagnosed OP? My DH is coeliac and was told that weight gain is quite normal when you switch to a GF diet as you’re absorbing your food properly.

I am both coeliac & intolerant to lactose. I eat potatoes, rice, GF pasta. With tomato based sauces & mince or chicken.

Also fruit, rice cakes. Aldi do some very nice protein snack bars.

Our go to meal as a family though is a traditional roast. With Free From gravy.

Dh has been living off crisps, gf biscuits, fruit and chicken or mince meat with veg, we can't get hold of gf pasta anywhere or bread anywhere so his diet is extremely dull at the moment.

Although I did manage to get a gf goodfellas pizza in Tesco last week so he had that for dinner one evening, said it was far less cardboardy than the ones that dominoes and pizza hut do - so that might be a weekly buy haha.

The DDs (intolerant, not coeliac) do baking using oat flour ( run oats through a coffee/nut grinder for fine flour, an ordinary blender works ok if you don't mind "bits"), we have a lot of banana bread, and tomorrow's breakfast for dd3 will be banana pancakes as a change from overnight oats
I generally try to meal plan using naturally gf foods (so potatoes
and rice as the carb) as gf pasta for eg is too expensive to feed non gf people with, and I can't be hassled with two pots of pasta cooking at once.
DD2 (at uni, so not my responsibility!) eats a lot of eggs, a lot of lunches are egg mayo on oatcakes, and her snacking is either Aldi own brand tortilla chips or a mush of rice crispies and peanut butter (nicer than you might think actually)
Own brand stuff quite often has less stuff added to it, so check labels

I sympathise. What about something really easy and fun like a sausage pasta bake. Can be basic like Bolognese sauce, GF penne (if you can find some) and plonk in some sausages and cheese on top (even vege). Let cook in oven til cheese cooked. (If you want to you can add vegetables if you can find some)

Otherwise, I jazz up some chicken with a Nandos lemon and herb rub (check if suitable - I have a wheat allergy not coeliac). I cut a breast into three or four and bake for about 10-15 minutes and have with salad or veges. My kid loves this.

I like some almonds instead of bikkies. I love bikkies though. And sadly wine adds inches to my waist while I am watchingConfused

I recovered pretty quickly. (Btw, as an aside, make sure your contraception is bang on. My body was so damaged by malnutrition due to non absorption of nutrients that I couldn’t conceive, I got pregnant very quickly when I recovered.) You don’t think you will ever feel normal again, but you will. I only get biscuits and things as an occasional treat. No one else is coeliac in my house, but all the basics, stock, gravy, sauces are gf. I have gf porridge with fruit for breakfast. Lots of veg, Fruit, some meat, rice. You’ll come out ok op. It’s not great Timing, but you’ll get there. Low carb is easy on gf.

I love my crockpot. There is something about slow cooked pasata with some chopped veges. If you throw in some cubes meat or chicken it is good. I don’t need any pasta or starch but you could do whatever. My the rest of the family, you can put some in a casserole dish and put puff pastry over it if there is some (the Gf puff is ok too).

Or if you have chicken breast and prosciutto you can cut the breast so that you can make a little vertical roll and wrap with prosciutto dollop on a little garlic butter and bake. That is good with salad or veges.

@OhNoNoNoNotThatOne Morrisons own gluten free pepperoni pizza is also nice. I don’t like the Dominos one & don’t have Pizza Hut locally. But would have a Goodfellas GF or a Morrison’s own any day.

I have found that even though my stomach doesn’t like much grain at all, even much rice. So I don’t eat cereal or any gf breads.

But I do a morning smoothie with whatever milk I want to use, 1/2 cup frozen blueberries and 1/2 banana and a bit of high protein whey (watch calories in that whey ) and ice. It is my salvation.

Thank you everyone for your replies.
So I've had a good mooch around in the freezer and the cupboards and I have more than I recall having.

I've just recently been diagnosed coeliac a few months ago and have been preparing myself mentally and familiarising myself with different things but I can't put it all together because i get overwhelmed. Hence I've stuck with very basic stuff.

I have gf spaghetti, rice noodles, gf sweet n sour sauce, korma sauce, pesto. Frozen salmon and prawns, gf flours and baking powder, tins of tuna, a sweet potato and some small potatoes. Tins of beans and eggs.

I have waffles which I believe are gf but not my usual choice. What I'm concerned about is putting weight on but I'm already a little overweight so I'm getting a bit worried about that now.

Admittedly, I'm in a really lazy, uninspired and stressed frame of mind and I think it is hindering my ability to be creative with things.

Before this happened i had intentions of just doing a very low carb and gluten free diet (killing 2 birds with one stone; weight loss and gf) but i think i first of all need to think about gf.

I appreciate all recipes, suggestions and ideas as i can use this to come back to when I'm confused or stuck for ideas.

@Troels I'm good with using the coeliac website and I have the app but I think I was expecting more. I look forward to having a booklet to flick through though. I can suggest my sister joins the fb group and watsaap me stuff.

@VivaLeBeaver I like chickpeas etc, infact, I like a lot of different foods and (usually) like to try new stuff. Thanks for the links !

@TheMagiciansMewTwo I do believe my local butcher is still open. I could ring and ask if they deliver.

@CoffeeRunner I do love a roast, particularly vegetables. Will miss my homemade yorkshire puds though. And the gravy I tried was not as bad as I'd anticipated. Infact, a lot of the stuff I have tried so far has been just as tasty as the real deal.

@ohno it is very boring atm, with the lack of various items that people need for this diet. I did see some gf warburton bread in my local supermarket but It doesnt appeal to me tbh. I have also been eating gf crisps (something I rarely eat)

I've taken some frozen salmon out to defrost for tomorrow, I've chopped some salad that I had left and I've got it prepared in the fridge. Then I'll try to create a recipe book. Will take my mind off all the worry and anxiety.

I'll look through this thread, and various links and find some inspiration . Thank you all for your help

Try the freezer sections for easy meals - gf fish fingers, cheese and onion bakes etc. Not super healthy but depends what you pair them with. Rice, potatoes, sweet potato, loads of veg, gluten free pasta etc etc. I often do mash with half and half sweet and normal potato to make it a bit healthier. I don't seem to have any issues eating a balanced diet. I even went vegan at one point, now that was hard! You are possibly feeling tired from too many sugar highs and lows from all the snacking. Can you tell us what you used to eat and we can help you with alternatives?

Btw - You can make gravy with a stock cube and cornflour mixed with meat juices and water from the veg
