What foods are you eating?
I feel I'm gaining weight. I'm snacking on gluten free biscuits at any chance. Other than that I am having potatoes with beans or eggs with beans or gluten free cornflakes.
I made gf soup a couple of weeks ago and I've had some tuna jacket potato but I feel restricted. I dont know if it's me not being creative enough and too exhausted to knock up anything fancy.
Are you finding it difficult to eat healthy due to isolation or lack of food options etc.
Please tell me how you are managing isolation with this condition.

No, what I was asking, op, is what would you have cooked BEFORE you were diagnosed coeliac?

eg you got into a system, you knew what you were doing. So what would you have cooked before? Tonight I mean, what would you have rustled up?

Boiled egg, rice/potatoes, coleslaw, veg/salad.

Etc. The choice is endless. I do have replacements but I don't need them. eg I rarely eat bread, it's too much faff (but I do have a bread maker and Dove's GF flour. I just don't use it much). Plus I don't eat pasta much, I really don't need it, I have so much choice otherwise.

I'd forget about the low carb iiwy. Get the hang of the gf first (easy peasy) then add low carb if you really must.

I'm pretty good at baking, I do have a sweet tooth and I like a 'treat', the banana bread I suppose has some nutritional value Grin. I'm open to trying that.

Smoothies yoghurts etc I'm willing to have. I like fruit, veg, spices, nuts. I love food in general. Can take or leave the stodgy stuff but I think that's because before I was aware I was coeliac it used to make me feel tired and ill so I always tried to avoid.

I have a slow cooker and can try things in that.
I'm gutted, was supposed to be seeing a consultant about all this but then coronavirus! and it's all been put on the back burner so I never got the right help before I started this.
I had to research it all online rather than speaking to a nutritionist/professional.
I'm not sure I've missed out on vital guidance but you lot have given me lots of helpful advice.

It's the tiredness and joint pain I struggle with. And I'm like a ghost atm so I hope I can get some colour back in my cheeks and my hair to grow back in because a lot of my hair has dropped out lately.
I just feel wiped out and ill Sad

oh no! I had a huge list of stuff you can cook - what happened to it?

eg cottage pie
Egg and chips (YUM)
Chicken, rice, veg/salad
Fish, rice, veg/salad
Fish, potatoes/chips, veg/salad.

think of the endless ways you can prepare potatoes and rice. I've even had pasta sauce with rice, it's lovely.

When I stopped eating gluten I felt AWFUL for about a week - like flu. Then after the first week it was like I was BORN AGAIN! Wonderful!

You're detoxing op. Give it time (and try not to worry about the flu symptoms)

I used to eat meat,fish, veg. Thai or indian curries cooked from scratch.
Omelettes, salads, vegetables with various things on the side, coleslaw, potato salad.
A variety really.
I did a low carb diet a while ago and I've never felt better. I eliminated all sugar and carbs. My depression lifted. I was RUNNING up the stairs, rather than crawling. Grin

@springydaff. This is why I am anxious. I am not sure if the pains I am experiencing are 'symptoms' or just because I am going through a gluten detox. I've felt worse these last few weeks than I have in a long time. The timing couldn't be worse.
I suffer terrible acid reflux and chest pains but then I get in a cycle of panic not knowing what the pains are in my body.
Today I've had wild stabby pains in chest and abdomen and I don't know what its down to.

Rice.. Gluten free pasta tastes the exact same as normal pasta. It just means no bread or biscuits basically.

@springydaff all the stock cubes n stuff I used to use, the yorkshire puds etc and admittedly the cakes i used to eat. Those have gone (and been replaced by gf versions) Grin
Actually, in preparation for the test I had to reintroduce gluten and I took that as an opportunity to overindulge in all the stuff I'll never be allowed to eat again. Like a last supper that was months long

Don't worry, let it pass - it WILL pass.

Talk to your GP to reassure yourself - my GP offers phone/skype consultations, as most GPs do at the mo.

Honestly, you don't need to stress about the diet! It couldn't be more simple - your usual routine, just no pasta or bread.

I also imagine you feel shit, with allsorts of unpleasant digestive affects, because of the massive carb/sugar influx. That makes me feel shit!

As a pp said, just eat normal food (just no pasta or bread/biscuits/cake etc).

If you want to replace pasta/bread/biscuits/cake at a later date (when this blasted crisis is over!) then you can do that. But for now it couldn't be more simple. HOnestly!

Porridge with strawberries
Thai chicken salad
Frittata with feta, roast veg, potatoes and salad on the side.

Snacked on a jelly and a rice/nut bar thing.

That was today's menu.

Tomorrow will be:

Porridge with strawberries
Frittata and salad (leftovers)
Chilli for dinner

I'll probably have another jelly and some fruit for snacks.

My tip is don't overthink it. I don't really buy replacements, just look for another option.

I make my own stock - I've always done it, so it isn't a great change. Delia's recipe.

While this crisis is raging it won't necessarily be easy to get replacements (though I got some GF sausages in both Asda and Morrisons recently! Most supermarkets have cottoned on to the whole GF thing) .

But, for now, keep it simple - rice and potatoes. Forget gravy for now, it will be fine. Forget yorkshires, you won't die! It's amazing how quickly you get used to not having stuff you thought you'd die without.

If you feel you're addicted to sugar/carbs then look at a recovery programme, eg OA. I can vouch for it!

You don't need to go without Yorkshire puddings OP.
200g cornflour
300ml milk (I use semi skimmed)
6 eggs
Extremely hot oil and just cook as normal. Makes 12 enormous individual puddings (freeze leftover for next time).
They're gorgeous. DD is coeliac and a roast is her favourite meal but we all love these Yorkshires!!

With oats doesn't it depend on how sensitive you are? It's a case of "may be processed in the same factory as wheat". So if you are coeliac there's a contamination risk, but many people with just an intolerance will be fine.

Though DH did recently buy oats that contained 10% "wheat bran"!

Sorry to flood the thread but you really don't need to be thinking of replacements for now. Yy you'll get them sorted at some stage, but now is not the time with all that's going on.

Just keep it simple.

I don’t understand this - what are all the things that you’ll “Never be allowed to eat again “ ?

Most treats have an acceptable Gf alternative . I’ve been Gf for about 10 years and I can’t think of a whole group of food that I crave that I’ll “never eat again”.

Of course there are certain occasions ( like eating at someone’s house or a wedding ) where the Gf alternative is a bit crap and you feel a bit sad. Like where everyone is given a delicious chocolate cake and you get an apple. But it’s not like i will never be allowed to eat chocolate cake again. I can just go straight home and make one if I want.

I wonder if you are over reacting a little and stressing yourself out ? because it sounds just a little melodramatic. Eating Gf is very easy at home and fairly easy out of the home ( most of the time ) as long as you are prepared.

YOu don't have to 'try your best', there's nothing to it!

BUT i remember the dismay when I was first diagnosed, the wandering around the supermarket not knowing what on earth I could and couldn't eat. Maybe you're there at the moment? It will pass. You'll get to see it's all easy peasy.

Once you get all those biscuits out of your system you'll be able to think straight Wink xx
