How and what veg to freeze?

I have a packed bag drawer and would like to just dice it up and freeze it all to use in the future.

Questions

  1. Is there any fresh veg that doesn't freeze well?
  2. Do I need to dice and pre freeze individually on a tray before transferring to Ziploc bags?

I freeze broccoli quite often (I'm the only one in the house who will eat it!), I blanch it for a couple of minutes then put into very cold water before freezing and it's fine. I've also frozen broccoli (and cauliflower) cheese before and it's okay, goes a bit mushy but I don't actualky mind that. Have you considered making soups and freezing them! I've made soup with mushrooms, lettuce, asparagus etc and it seems to freeze better than the veg alone IYSWIM. Okra freezes ok too. Onions, potatoes, sweet potatoes, swede and other root veg last well without freezing. Peppers freeze ok, Sliced, speak out, frozen then zip locked, maybe not perfect for stir fry but good for sauces.

Leeks. Just clean and slice and put straight into a bag without cooking or spreading.
