Chicken curry recipe

Does anyone have a good but simple one? I have chicken leftover from a roast (not a magical MN chicken) but I want to turn some into chicken risotto and the rest into a curry. I have a well stocked spice cupboard but don’t have a recipe as I would usually buy a paste but want to make my own if anyone has a recipe or tips?

Actually that does sound like a magical chicken if you can get three meals from it! But I suppose it depends on the size of your family - and the chicken.

Fry chopped onions in a little oil (and any other vegetables you fancy, peppers, mushrooms, potato etc)

after 5 mins add curry powder, Garam masala, cumin, coriander and turmeric coat the vegetable and fry for a few mins more. (If from scratch you would add chicken and seal at the point)

Pour in chicken stock to cover and add dried lentils. Turn the heat down and let simmer for 30 mins or so until the lentils have broken up and thickened to a sauce. Add your chicken for the last 5 mins or so to heat through...

That’s brilliant thank you all. And I love the idea of bulking with lentils as have lots of those as well. @Seventyone72seventy3 it is only me and DH and for someone reason the smaller chickens had sold faster than larger ones?
