This week I'm doing (for lunches and dinners)

Roasted tomato pepper and basil soup
Lentil and carrot soup
Veg and seitan stir fry
Sweet potato katsu curry
Veg gyoza (from freezer)
Vegan sausage and chips
Vegan sausage pasta in tomato sauce
Maybe bean burgers or panko breaded portobello mushroom burgers on Saturday
Nut roast and roasted veg

Today: vegetable soup lunch and Mary Berry's stilton and mushroom tagliatelle for tea.

Tomorrow: Quiche, baked potatoes, spinach salad and roasted vegetables for lunch. Soup for supper.

Monday: Chicken, vegetables and noodles for dinner.

Tuesday: Sheperdess pie

Wednesday: Sage and onion pork meatballs, roast potatoes, apple sauce, gravy, spring greens and carrots. (Originally a Gousto recipe that my kids love)

Thursday: poached or scrambled eggs on toast or soup.

Friday: perhaps a fish pie. Haven't got that far yet.

Weekdays we mostly have lunch at school or work or we have sandwiches, leftovers or soup if we are at home.

Today- making lemon & blueberry baked oats for breakfast. Dinner is homemade KFC Zinger burgers with bbq wedges.
Sunday - breakfast is maple, bacon & berry French toast. Dinner is Cuban beef with pasta. Maybe rice pudding for dessert.
Monday - Moroccan salmon & roasted veg with cous cous
Tuesday - Tuna pasta bake
Wednesday - shakshuka & broccoli
Thursday - Chicken with leeks in blue cheese sauce and mash
Friday - Curried sausages with chips/rice

Today: Chinese style pork mince and noodles
Sunday: Roast chicken
Monday: Teriyaki salmon and stir fry veg
Tuesday: Sausage and mash
Wednesday: Carbonara
Thursday: Satay sweet potato curry
Friday: Fajitas

Also doing a katsu curry (mine with tofu)
Gnocchi bake
Spanakopitta with salad (apple strudel with left over filo)
Mushroom risotto
Chickpea curry with flatbread
Something with mushroom to use them up, maybe stir fried with noodles.

This week we've had / are going to be having
Pasta salad with lemony basil dressing.
Ramen with crispy tofu.
Chicken fricassee (using frys chicken style strips) with mash and green veg.
Linda mac pies, roasted potatoes and parsnips with lots of veg.
Tesco vegan chicken nuggets chips salad and corn on the cobs.
Sweet potatoe and spinach curry.

Tonight fake away - veg for us, teens dds want meat.
Tomorrow veg lasagne
Mon traybake - chicken thighs, new pots, lemon and rosemary with green beans

Tonight we are having macaroni cheese.
Tomorrow - roast chicken and trimmings
Monday and Tuesday - cottage pie (there is only me and DS so I make a family size one that lasts us 2 nights)
Wednesday - Thai salmon fish cakes with rice and salad
Thursday - chicken and mushroom pasta in a white wine and cream sauce

Not very low in meat though, sorry!

Pressed post too soon...
Tues soup and pudding night - parsnip and sweet potato soup, rhubarb crumble
Weds veg chilli and jacket pots
Thurs mushroom stroganoff rice and green beans.
Fri we are out so kids will have pizza and we'll have street food out.
