Ladies... what do you eat on nights alone?!

My partner is going away at the weekend and I want to make some nice meals for one , but easy (no point alot of effort for one person) I am thinking definitely garlic prawns if anyone has a recipe?? (Partner hates prawns - this is my chance!!!!)
What else does everyone eat when they are by themselves?!

Nachos with guacamole, salsa and the rest.
Or
Salmon with mushy peas (home made not yucky tinned stuff) and then cheesecake(not homemade)

Tonight I bought some fresh handmade mushroom porcini ravioli and had it with salt and Parmesan cheese. This was a real treat because boyfriend only eats gluten free pasta. It's the first time in 10 years I have bought this to eat by myself with red wine and it was incredible.

My DP hates fish, so I always have it when he's away - I tend to buy the M&S Gastropub fish, chips, and mushy peas. I also will often cook a big pot of chilli, and portion some of it off for the freezer before adding extra spice to what I'm going to eat myself.

Waitrose or M&S tv dinner
Pasta (DP isn't a fan) - usually with shit loads of cheese.
Poached eggs/boiled eggs
A posh individual pie with veg
Cheese and biscuits and nibbly bits ie CRISPS.

Sandwich or baguette with crisps usually. Insist on doing my own thing at least once a week.

We live very near a mini Tesco and have got to know one of the cashiers. She always comments 'ah, DH working away then?' when I rock up at the checkout with a hugely eclectic armful of crap that shouldn't go together but just DOES.

No fruit, no veg, nothing vaguely healthy or nutritional, just tasty stuff that I can graze on from a full stretched out position the full length of the sofa.

Clearly, I am a creature of habit.

Freezer roulette. There’s always a single quorn burger or fish fillet lurking in the bottom of the freezer, so that with a jacket potato and some beans or veg.

I order in from the local Japanese place - I get everything with tofu cos DH hates it and I bloody love it.

I eat alone a few nights a week - tend to go for easy stuff like sardines or eggs & avocado on toast. Often have a plate of chopped up “nice things” - cheese, olives, cured meat, pear, apple, salted almonds etc. If I’m making an effort I’ll have roast salmon or chicken with veg and rices/couscous.

Bake a salmon fillet marinated in soy sauce, honey and grated giinger.

Stir fry spring onions, red pepper, sugar snaps and carrots. Mix in noodles and flake in the salmon (pour in any sauce left), add a little extras soy sauce. Yummy.

Bacon and mushroom, fried together. Add tinned tomatoes, and a little vegetable stock, mix though linguine.

I had bought some strawberries and chocolate for valentines day - just for a treat with the family dinner - but we never got round to eating them.

My family have gone on a half term break but I've stayed back to work and enjoyed eating a punnet of strawberries dipped in a bar of melted white chocolate (in front of a movie). It was lush.

I can't be bothered much with effort for one and have replaced a couple of meals with wotsits and/or custard creams which is appalling as I do like healthy food but just feel very lazy when it's just me to cater for.

Strong Garlic bread and hummus both feature when Dp isn't around as he doesn't like the smell. I don't avoid them specifically, more I save them for if I know Iv got no one around for the garlic pore seepage the next day Blush

Beans on toast!

I love cooking but when it's just me I'm cooking for, I'd rather have something quick and easy. The quicker I can chill out with trashy tv and massive cuppa the better Grin

DH can't handle eating lots of carbs so when he is away I seem to eat a lot of white bread and pasta. He also can't tolerate much dairy so wherever I can I will shoehorn in lots of cheese. He is going away again soon and I have been planning my meals. So far on my list I have Macaroni Cheese (leftovers in a toastie with fried onions the next day), gnocchi with bacon and tomato sauce, baked meatballs with garlic bread, pizza, scampi in a bun (he hates fish) and maybe a steak pie with wedges and mayo. He won't recognise me when he comes home because I will be ten stone heavier.

Baked Camembert with crusty bread & crudités or a ploughman's lunch type thing.

Herb roasted baby new potato salad

Twice baked jacket potatoes with bacon, spring onion & cheese

Philly cheesesteak baguette with shoestring fries

Creamy garlic mushrooms on toasted ciabatta or pate stuffed mushrooms

Or if DS is here we'd order in from our favourite gourmet burger place

Usually a picky tea - olives, hummus, nice bread, cheese etc...dh wouldn't see it as a proper meal but it's my favourite.
Or mushroom risotto because then there's an excuse to open a bottle of white wine (which dh doesn't drink) and have a large glass whilst stirring the pot.

Or fishcakes if I can bothered to make them.
