Ladies... what do you eat on nights alone?!

My partner is going away at the weekend and I want to make some nice meals for one , but easy (no point alot of effort for one person) I am thinking definitely garlic prawns if anyone has a recipe?? (Partner hates prawns - this is my chance!!!!)
What else does everyone eat when they are by themselves?!

Jacket potato with crispy bacon bits and cheddar cheese. My dh wouldn't consider that a 'proper' dinner.

Hummus with chill sauce drizzled on top with tons of crispy pitta bread.

@barbaraofseville we always eat together , we do the same thing for both of us as that easy, less waste etc. But we both cook , not just me and both compromise I HATE MASH and DP loves it but we don’t have it lol Grin

I understand what @BarbaraofSeville is saying. I cook things we both want to eat when dh is home...but i have zero motivation to cook a proper dinner for myself. I just can't be bothered. I was the same when I lived alone....I would even buy pre made party food from the supermarket and eat that for dinner Blush

I started a thread about this a while ago as all I can be bothered to eat when I'm on my own or DH is working is a bowl of cereal, bagel, bag of crisps, etc.

I don't have a dh but I eat differently when the kids are here because I want to give them meals that are nutritious and tasty which generally means time and effort as I don't have a lot of money. It's easier to cook something that's nutritious, quick and tasty for one as I can buy more expensive components eg good steak, fresh seafood and fish. Also, I don't mind eating junk by myself every now and again but I don't want to serve it up for my kids and it can work out expensive too: it would cost loads to buy four ready meals, one each, for us all so I never do that. But I might get one or two for myself while they're away. Nice ones, mind, not fucking Iceland.

I'd make a nice home-made arrabbiata pasta sauce and have pasta with cheese on. Garlic, chilli & onion softened in a bit of olive oil, tin of tomatoes and a tablespoon of tomato puree, balsamic vinegar, salt & black pepper. Cook down til the sauce is nice and rich. Yummy.

I eat a lamb steak with piles of veg. Or a salmon fillet with piles of veg. My family doesn’t like lamb or piles of veg but I think I could eat like that 3x a week and not get bored.

The Aldi frozen garlic prawns are lovely!

I usually have them with spaghetti, rocket, lemon juice and parmasan shavings...and lots of black pepper!

There's some yummy stuff on this thread Grin but makes me sad some people think there's no point cooking or putting effort in for one person - you're worth effort by yourself!!

I live by myself and I make lots of lovely food, plus occasionally I have toast for dinner because I can :)

When the dc used to go to their dad (they dont now so i dont really have alone eating times) I used to love to make an avocado ritz. Cut avo in half and fill with prawns in sauce... made up of tomato sauce and mayonnaise lots of chilli, salt and pepper.

Easy. Pretty healthy. Very filling. Hardly any dishes. Grin

Well DP is about to work away for the next 4 weeks so my weird meals always come out into play. DO hates tuna so tuna jacket potatoes tend to feature a lot. As does just a meal of some smoked bacon, tinned tomatoes and buttery white bread. Oh and a really crappy roast dinner ready meal also with buttery white bread and crisps on the side. Filth!

It’s not putting more effort just to please him it’s about putting less / zero effort in when I’m alone purely because I’m a lazy fuck Grin
