I'm going to be cooking for a group of friends in a few weeks. There will be 6-8 of us. One can't eat pasta, one doesn't like rice, one (me!) is vegetarian, a couple are fussy about vegetables/won't eat pulses. I usually end up making a veggie shepherds pie but am getting bored of that. Last time I did a few Mexican dishes which worked well, maybe something similar would work but I can't figure out what. Fussy people probably wouldn't eat Chinese. Pizza could work for everyone except me (I'm doing Slimming World). Any ideas?

What about pulled jackfruit sandwiches with corn, coleslaw etc?

Sounds lovely, but there's no way if get the fussy ones to try jackfruit (one would be polite about it, the other is my sister 😂). I'm now thinking either burgers (all veggie or a mixture) or a roast chicken with a veggie option for me.

How about a veggie tagine with herby, jewelled cous cous?
Could do some chicken or lamb skewers in a ras el hanout on the side for those who want meat.

What about fajitas, and everyone loads up their own? Chicken, beef, peppers and onions, guacamole/avocado, cheese, beans (black or refried), sour cream, jalapeños, lettuce - all in different bowls and you serve into your own wraps?

How about Indian food but in a buffet style? Here are some suggestions in no particular order:

Yoghurt and mint dipping sauce
Vegetable curry
Vegetable spring rolls
Tomato salsa
Tandoori spiced paneer skewers
Sweetcorn pakoda
Spinach and potato curry
Shingaras - filled with either potato and peas or potato and cauliflower
