Leftover red wine

How long can I use leftover red wine for cooking before it's vinegar?

I opened it on 17th Jan, drank half then forgot about it Blush. Can I use it today for a casserole or will it be grim?

Does it smell off? If not use it. Nigella recommends freezing any leftover wine to use in cooking. I never seem to have leftover wine myself...

I wouldn’t - i think that’s just a little too long. If I think I won’t drink all the wine in the bottle in good time I freeze it. Smile

You would need to have added vinegar mother culture to it to turn it into vinegar.

Well the red wine went into making a very nice sausage and lentil casserole. It's a bit sharp but happy not to have wasted it!

Ideal thing to do with red wine that's gone past the drinking point. It's not as if a bit of vinegar would harm a stew anyway.
