Loads of leftover roast chicken

In my quest to be supermum and make chicken stock, I'ved ended up with a massive tupperware full of leftover roast chicken.

Any ideas on what to cook with it all?

Also, can I freeze it? It's just plain roast chicken, chicken legs cooked from fresh.

I fry peppers onions courgettes and mushrooms and add the cooked chicken. I then stir in some cooked rice , soy sauce and chilli sauce .

Yes you can freeze it - personally I would take the meat off the bones and chop it up before freezing.

I make chicken pie, chicken salad, chicken curry with ours.

Yes you're fine to freeze it.

Use it up in pies, pasta, risotto, on quesadillas, in fajitas, a handful in soup to bulk it out, in salads.

Chicken risotto (use the stock as well) and add mushrooms
Sandwiches (decedent but my fave!)
Chicken pasta bake
Chicken enchiladas

I freeze mine as it is but mostly I make curries for the freezer. Use it for lunches/ salads. Chicken sandwiches for tea. Fajitas

Yes I did, buzz, well actually, I roasted 8 massive chicken legs then made stock. This has all stemed from the Great Chicken Stock Soup we had last week that actually had the kids eating veg all week as the soup was so good! And it was good. The stock totally made it Grin

('Recipe': onion, green cabbage, sweet potatoes, half tin of chick peas, big handful red lentils and then obviously loads of chicken stock, all blended till smooth. The kids inhaled it)

Take it off the bones and freeze in meal-sized packets.

Curry, chicken fried rice, chicken, leek and mushroom pie - there are plenty of things to do with it.
Mulligatawny is very nice, too - a hefty soup with curry powder, chicken, veg, apple and lots of rice.

Roast chicken makes amazing curry. Curry it and then freeze.

Slow fry onions, off the heat add teaspoon of chilli powder curry powder cumin and tumeric and garlic.

Stir well

Add veg stock cube and a spoon of brown sugar - add to onions and stir in

Add chicken and any veg you like and cook for 20 mins

Cornflour to thicken

Ooh I did a nice coronation chicken this week with leftovers. Chicken, mango, raisins, mayo and Heinz curry sauce!
