Would love a few fresh recipes to cook in the week, especially for the days that seem to drag, and everyone is tired & hungry.

Pasta & pesto (with added chicken, bacon or tuna. And pinenuts).

Gnocchi in tomato/anchovy sauce - fry a red onion in olive oil, add tin of tomatoes (I use tinned plum tomatoes and mash them down whilst cooking). Add a tin of anchovies (drained, obviously, and chopped up). Let it all cook down. Boil some gnocchi, mix it all together. I sometimes add a handful of spinach to the sauce if I've got it. Also works with pasta.

Corned beef and potatoe pie.

Pre rolled short crust top and fried diced potatoe, onion, carrot, veg stock and a tin of corned beef.

Made it tonight and it was lovely.

Tuna pasta bake.

Veg bake, spread passata or cream cheese on bought puff pastry, add veg eg peppers, mushrooms, torn up ham, grated cheese. Stunning.

Corn beef hash, mashed potato, fried onions, add a fried egg.

Pasta and pesto.

Aldi do really nice packet risotto. A meal on its own or add to meat/fish/whatever.
