Sunday roast

I usually find Sundays so stressful with 3 kids and working full time. We are usually rushing to sorts things in the mornings, back by 12.30 and then too rushed to make a roast before we go swimming in the afternoon. Followed by juggling the laundry, washing school uniforms and my work clothes etc

Yesterday I had a quiet Saturday afternoon and made a full on roast dinner with lots of vegetables sides. Felt so relaxing and was actually able to enjoy a bottle of wine without the worry of everything left to do !

But the highlight is today had been easy, left over pork rolls for quick lunch and maybe a stir fry!

Can't believe I haven't done this before !!

I quite often do a roast on a Saturday. It's lovely any day of the week!

Today we've had Domino's delivered for lunch which has been a very nice treat.

I agree that one of the best things about doing a roast is the left overs. Meat for sandwiches or to go with chips tomorrow and I also like to do a bit of extra veg and potatoes for my lunch tomorrow. Makes a Monday so much easier.

I tend to peel potatoes and veg and leave in ice cold water overnight so very little to do in the next day except the meat. That said today has been a massive battle and getting dc to try veg ended up with me frazzled and nearly in tears (long process)

DH is religious about Sunday roasts and cooks one every week.

I sometimes do one midweek and yes, the leftovers are great for sandwiches, curries, stews, stir frys etc.

I live alone so never really have them now, I sometimes miss a nice roast.

I love a roast but they're a huge amount of hassle for two people - we go to the local pub for a carvery instead Grin

We always do a roast on a Sunday but it’s such a simple one.
Spice rubbed chicken with any combination of potatoes, carrots and parsnips all in a roasting dish. Just leave it to cook and get on with stuff. Then some greens or any veg on the hob at the end.
Pudding on the sofa with a film in the evening.

I had leftover Indian takeaway for lunch today. Uber Eats had a great offer on so I went to town.
