Favourite Spanish food?

Finally having done work colleagues round for food in a few weeks. Think we'll do tapas - dp makes the best Patatas bravas and tortilla! What would you like to see on the menu????

@TheBitterBoy v reluctant to buy a deep fat fryer as know id use it for other unhealthy stuff! Haven't had much success with shallow fry or roasting though! Might need to get back to Andalusia more regularly (not a chore!)
