Vegetarian meal plans

So I’m trying to eat around 4/5 meals a week vegetarian or vegan but am struggling to find a variety that are healthy and easy to cook after a full day at work.

So far successes have been Anna Jones dhal, veggie green Thai curry and veggie fajitas.

Please people inspire me with your easy healthy veggie meals 😀

I’ve just made a lovely black bean and sweet potato stew from my hello fresh box.

Chop sweet potatoes, toss them in oil and roast in the oven for about 20 minutes

Meanwhile fry onion till soft, add a clove of garlic and Harrisa paste, tin of chopped tomatoes, veg stock cube and 200mls water.

Simmer for 7/8 minutes

Add tin of black beans and a couple of handfuls of kale

Simmer for 10 minutes

Add the roasted sweet potato

Serve with a dollop of Greek yoghurt, sprinkled with toasted almonds and spring onions

It was bloody lovely

This week:
Sunday - Greek giant butter beans, roasted garlic potatoes, tsatziki
Monday - black bean soup & nachos
Tuesday - Jamaican pasties (bought) with rice and peas and mango salsa
Weds - veggie haggis with roasted potatoes, carrots and onions, plus sprouts
Thursday - out
Friday - probably either veggie pizzas or veggie burgers (the Sainsbo's frozen spicy bean burgers are nice)

Mixed bean, pepper & avocado wraps - Fry a handful of onions and 2 cloves of garlic for a few minutes, add a tin of mixed beans, sliced red peppers and half a packet of fajita seasoning. When when heated through place mix in wraps and add sliced avocado and salsa, with or without grated cheese.

Jacket potatoes with beans / coleslaw made with vegan mayo

Bean chilli and rice

Green shepherd's pie - the 'meat' is green lentils, leek, carrots, onion, whatever else you have hanging around, then top with potato

'Orzotto' - tray bake with orzo and veg, very little prep - the green roasting tin book has lots of good recipes along these lines.

Pasta with pesto / homemade tomato sauce

Potato and leek hash - fry up in a pan with any other veg, plus mustard and Henderson's relish - and chuck in grated cheese if you're eating dairy.

This week we’ve had:
Green lentil and vegetable shepherds pie
Roasted vegetables and pasta with pesto
Tonight was homemade pizza
Tomorrow is www.theendlessmeal.com/creamy-coconut-lentil-curry/
Thursday is caramelised onion quiche
Friday will be vegetarian burgers
Saturday probably vegetarian moussaka
Sunday... not sure 😂

Easy curry- roast some cauliflower florets, carrots, chunks of onions and red peppers.
Mix curry paste and coconut milk in a pan and add a drained tin of chickpeas and the roasted vege. Warm through and stir in some spinach leaves at the last minute.

Hi op, this is what I've ended up doing. We eat veggie most of the week. So I decided that while I got used to coming this way we'd follow a set week. One day we'd have jacket potatoes, one day a curry or pot, one day beans E.g. Mexican style, one day eggs, one day pasta, Saturday could be more flexible and Sunday is a roast. I then got myself a nice notebook and wrote a list of all the veggie jacket potato toppings I could think of, trawled the Internet and recipe books adding to it. I did the same for curry. Beans. Eggs. Pasta. Now all I have to do is pick one thing from each list to have each week, have a meal plan for the week and shop for that. As I've got more used to veggie cooking I have been able to be a bit more flexible :)

The hello fresh naan recipe sounds so good! And yesss shakshuka I had forgotten I used to have that for breakfast but that would make a good light dinner too!
