Cooking for one

DP is going to be away 5 nights a week for 4 weeks soon (sob), and I'll be on my lonesome.

I cook most nights and always cook from scratch but never just for myself (I usually end up cooking enough for about 20 people).

I know I'd get bored very quickly of chilli, spag bol etc. Any tips for cooking for one would be much appreciated, as I've never done it!

My DH is working away at the moment ( we’re in the middle of a job relocation).
I still cook from scratch for myself though and just freeze any extra portions.
Last week I made kedgeree, roast lamb, Ikea style meatballs, leek and potato soup to name a few.
