Harry Potter studios is well worth a visit if she's a fan and has never been. If you're not too far away you can both go for less than £100.

Otherwise I'm sure Swarovski do special birth stone necklaces or charms.

I'd go with a Swarovski bracelet.
Or take her for lunch and suprise her with a trip to the Swarovski shop for her to choose something special.

I'd ask her what she wants. £100 is a lot to spend on something she might not love.

Why can't she work? I mean, if it isn't a mobility problem, how about an experience like going on a llama walk, and afternoon tea/lunch afterwards? Or a trip on the London Eye, or walking over the O2 Arena in London?
Trip to the theatre, or ballet, or a concert. Or one of those restaurants where they have a tribute act playing whilst you dine, maybe a band that was popular in her youth. I was at Bibi's in Leeds last week, and saw these advertised (remember Bruno Mars and Abba tributes, there were more), and a friend said they were very good.
A learning to cook session with a top chef, if she would enjoy that.
60th birthday rose, if she likes gardening.

I would take her for afternoon tea, just you and her, and there is lots of lovely swarowski on sale for a keepsake. £100 would cover that plenty.

I took mine myself and my Brother to a very posh hotel for the night and dinner.. Just depends what she likes 😁
