What can I have for dinner?

Something light but tasty and relatively healthy. I’m feeling a good bit bagged up on the seasonal foods.

Can get to a shop and get anything at all but I’m struggling for ideas.

Nothing too spicy as dd isn’t keen. Any suggestions?

I've put a load of veg to roast, with chicken thighs on top (peppers, courgette, red onion, new potatoes, whole garlic cloves).

I don't know what Pho is but the other suggestions sound like main meals to me, not light meals.

I just made an epic stir fry with lots of fresh veg, rice noodles, fresh chilli, lime, spring onions and topped with toasted cashews

Few fab ideas for mid wet but I’ve ended up with a club sandwich. Whole grain toast, salami, cheese, pickle, tomato and lettuce.
