Yes you can.
Sometimes I use entirely double cream, sometimes I use half double cream and half milk, sometimes I use single cream. They all work!

Yes, it'll be fine. And not a stupid question at all - double cream and single cream are different and don't always taste right when substituted.

By-the-by, but dauphinoise potatoe is my absolutely least favourite potato dish; hard to think about without tummy turning (boak), just don’t like the creamy soft texture against the cheesy crisp top for some unfathomable reason. Can’t abide mushy peas either... as you were & Happy New Year 🎆

And I crush the garlic into the cream and use the whole clove, albeit a small one. Sod this delicate rubbing it around the dish lark. Wink
