Health low meat, meal plan help?

Hi Ladies.
We ate really well in 2019 and were in great shape until September when we started to let things slide. I want to kick start things again with lots of veg and meal prepping.
Things is. We never have enough room in the fridge. I was thinking of getting a huge tray of chicken, cooking it with various marinades and freezing it and then taking out what we wanted eat morning and letting it defrost in the lunch box. But how do you store your cooked veg in the fridge with enough room for prepped lunch, breakfast and the essentials and "waiting to be prepped" foods? Is there a genius way I ahven't considered or do I just have a small fridge and everyone elses shit fits fine?

I prepare lunches for monday . Thursday on a Sunday night. There's 3 of us we all take salad with different meat, egg, cheese ,salmon e t c. They're all boxed up and stacked in the fridge everybody has their own boxes and just pull out a fresh one everyday. I just leave tomatoes whole so they don't make everything go soggy. Works well for us, stacks nicely in the fridge and we have virtually no waste. Takes up one shelf of the fridge. Fresh veg is in a drawer for use during the week.
