Weekend away food ideas

DH & I have a weekend away booked. We didn't do presents as we are a bit broke so are escaping for a couple of days in January to a little rural self catering beachside cottage. No wifi, no shops, one pub/restaurant/shop in the vicinity.

So we will obviously need to bring supplies. I would like to buy some nice, easy to cook/transport food.

Any ideas of meals we can prepare and bring with us or ideas for easy but delicious meals that we can make without spending hours in the kitchen or having to bring a lot of shopping.

We only have 2 days away and plan to do a bit of hiking and watch the sunrise etc and just be on our own. We will probably eat one lunch or dinner in the pub but money is scarce so don't want to be splashing too much.

Take an already roasted chicken with you, have it with some salads eg potato salad, greek style salad, and you will also have some left over for sandwiches to take on your hike.

Make a beef bourguignon style casserole. Pack in plastic box and freeze for easy transport. You will be able to reheat in the oven or stovetop depending what is available at the property. Take a pack or two of flavoured cous-cous with you to go with it, easy to prepare with boiling water, and economical too!

Take a lasagne and a chilli with you to heat up.

Packet of smoked salmon as a starter.

Or a couple of good steaks and some peppercorn sauce from the M&S chiller cabinet.

Or any other nice one pot meal: beef in Guinness, coq su vin, a posh fish pie. Take the one for the second day frozen.

Tasty comfort food for a winter weekend.

A Greek night: take a moussaka, or kleftiko ready made, ingredients for a Greek salad and a few meze: houmous and pita/ taramasalata / tzatziki etc.

Then TexMex night: chilli ready to heat up, nachos with guacamole, sour cream, and miniatures of tequila or whatever and ingredients for slammers or margaritas.

Take a slow cooker if you have one.

Pre make any of your favourite one pot meals, so bolognaise, chilli, curry etc and freeze.
Meals will defrost on journey whilst keeping your cheese, bacon, sausages etc cold.
Take meats, pate, olives, par baked bread etc. Just plate up, no fuss.
Jacket potatoes, do them in the slow cooker whilst you are out having a walk and drink in the pub. Then have your favourite fillings and salad.

Take some large wine glasses, the glasses in SC places are never big enough!!
