I got one for Xmas. I didn't really want one but I'll give it a go
I'm not sure what to use it for or how to listen to music on it. Do I need a music subscription somewhere?

You need an account with one of the music streaming services, you can use it with a free account but a subscription is better.

I use mine to set timers when I'm cooking, as an alarm clock, I ask it questions when I'm not sure of something, I use it to switch the lamps on and off (with a smart plug) and to listen to music (via Deezer) or the radio.

Do I have to tell Google where to go to for music?

Yes, you should already have downloaded the Home app in order to set your Google home up, you link your Spotify account in the app.
