Ideas for so much food

Help. Due to illness and cancelled visitors I have so much Christmas food left. I need ideas for how to use. I've froze as much as possible and hate wasting food.

Parsnips and stuffing are my biggest concerns- any ideas?

Also got a lot of carrots and potatoes but can probably use up in meals. Meat is ok as I froze the extra.

I have two massive desserts that can't be frozen. Can't really have anyone round to help eat it due to continuing contagiousness.

It's stressing me out.

Have already froze some. The freezer is full- it's quite small. I'm now thinking some kind of stuffing casserole with mashed potatoes on top. Has anyone done this?

Could you cut the stuffing into pieces and tuck into the freezer like socks in suitcases. Use it when you roast a chicken.

What are the puddings - they may be freezable despite the label.

Parsnips should keep and you can use in soup.

I think stuffing crumbled over any kind of bake would be good. Chop any left over veg with some blue cheese and top with the stuffing and breadcrumbs.

Doing small stuffing parcels for freezing would work. I do have a wee bit wasted space It's pork, sage and apricot stuffing. Also got sausagemeat, hazelnut and cranberry. We love stuffing so always make loads.

One dessert is more like a cake but with fresh cream and the other is jelly based so I don't think they will freeze and also I have no room!

Will have a read through those recipe links too. Feeling better about it all now. MN to the rescue Xmas Grin

I buy sausagemeat stuffing in the sales each year and freeze it. It comes out when I need a meal in a hurry and gets used like mince to makes pigsty pie. (Like shepherds pie but with pork mince) cooks quickly, zero effort and tastes yum.... and so cheap in the sales.

Frozen stuffing is excellent even a year later.
