For ease this year I bought meat from M&S including a porchetta for today. Instructions are 30 mins at 220C fan, then 2 hours at 160C fan.

The meat has been in for just under 2 hours and the temperate probe says it’s done already. Surely that can’t be right? I’ve taken it out, put the probe in multiple times in different places and it all says at least 63C which is the done temp for pork.
What do I trust - the thermometer or the instructions? I’m worried the thermometer might be wrong - 30 mins less is a lot! We have a new fan oven so timings are usually accurate.
