Worried about my meat!

For ease this year I bought meat from M&S including a porchetta for today. Instructions are 30 mins at 220C fan, then 2 hours at 160C fan.

Earlier this year I bought temperature probes for a barbecue with a wireless Bluetooth thingie. When we’ve used them in the past they’ve been very accurately

The meat has been in for just under 2 hours and the temperate probe says it’s done already. Surely that can’t be right? I’ve taken it out, put the probe in multiple times in different places and it all says at least 63C which is the done temp for pork.

What do I trust - the thermometer or the instructions? I’m worried the thermometer might be wrong - 30 mins less is a lot! We have a new fan oven so timings are usually accurate.

My new fan oven is much quicker than recipes state , I usually both turn it down a little and reduce the time

Yeah, I think that’s it. I’ve checked every part of it and it’s all over the done temp so at least we can eat the ends and if it’s underdone in the middle after resting I can always cook it more. Glad I used the thermometers or it would have been cooked to death!
