Pre-prep Roast potatoes! Quick question!

I've pre-par-boiled my roast potatoes. How do I store them? Covered in goose fat, s/p, covered and in the fridge until tomorrow? Or cover and put in fridge dry without oil?

I'm half a bottle of wine down and the internet searches aren't helping me!!

Spread them out on a tray to cool then pile in a bowl with nothing else and cover and put in fridge.

On a tray no fat. Sprinkle with flour tomorrow before you put them in hot fat.

I added some goose fat to mine. I doubt it really matters one way or the other. If they turn out badly I’ll know not to do so next year. Xmas Smile

Dh has just par boiled and tossed in hot oil / butter mix and a load of salt and they're now chilling in the fridge. Apparently its how Jamie Oliver says they should be done
