I’m feeding 8 people on Boxing Day, and had arranged for a local company to cater, but they have let me down.

I now have to get the shops today to find something to cook, but what makes it really difficult are the dietary requirements (and why I booked the caterer in the first place). Any ideas for a very low fat, gluten free, vegetarian, non-spicy dish?!?!

Winter vegetable and bean casserole, serve with boiled potatoes and gluten free bread, You could do sprouts or cabbage as a side dish. Use two or three types of tinned beans and chickpeas for quickness.

They were doing a couple of options for each course, soup or risotto to start, lamb shank, chicken thing or a veggie wellington for main and 2 different puddings but I can’t do all that. I have been to Waitrose and spent a fortune on party food bits, I’m going to try and do a grazing table type thing, might be a disaster, but nevermind!
