Bread vs sausagemeat stuffing?

Which do you have?

Boring question but I'm curious to know which type will be on your plate this Christmas.

I'm in the sausage meat camp.

Joycejames - stuffing a turkey is perfectly safe if done correctly. Nothing like it in terms of flavor, both of the stuffing itself and the resulting roasting juices which, along with the giblet stock, make the best gravy.

Paupers Stuffing. Bread, onions and mixed herbs.

Actually, in my attempt to dry out the bread, I stuck it under the grill and toasted it perhaps a bit too much. Will it affect the taste do you think?!

If you don't add bread or other fillers to sausagemeat stuffing, isn't it just essentially a sausage?

I make one with ciabatta breadcrumbs, pine nuts, streaky bacon, rosemary and garlic.

We always do both - homemade bread/veg suet mix in one end, sausagemeat in the other! I have only stuffed the turkey once (wore washing up gloves) and luckily one of my sons will do it nowadays Smile. I will be cooking some of the stuffing separately for my vegan mum but for the meat eaters the turkey juices do make the stuffing nicer than if it's done out of the bird.

With turkey I do sage/ onion/ bread and sausage meat.
If I were stuffing a chicken or serving stuffing on a Sunday let's say I would just use a bread stuffing without the onion.

Can anyone share their trusted bread-based stuffing recipe? DS prefers bread stuffing so I'm now thinking of making him some in case he isn't a fan of the sausagemeat one.

My stuffing is made up of vegetable roll, sausage meat, breadcrumbs, sage and onion stuffed into the neck. I put a large orange, apple and a peeled onion into the cavity.

I do both so the veggies can also have trimmings. To be honest I just add red onion to Paxo for one and in the other it's red onion Paxo and sausage meat.

I am cooking for 16 this year so I do shortcuts when I can. Like I have bought ready made gravy, bread sauce and red currant jelly rather than making them all from scratch.
