What can I do with this ratatouille please?

My plan was veggie lasagne and I've made the base with courgettes, peppers, aubergines in a tomato sauce.
It tastes nice but I think it will be too rich for lasagne. I don't fancy it just as a pasta sauce, don't know why!
Any inspiration wise mumsnetters please?
PS we do eat meat and fish some days

Just make an indulgent lasagne

Or serve as a side to grilled fish

Make mash, mix in a big spoon of grain mustard and put on the top of it, under the grill for a couple of mins and you have veggie Shepherds pie!

On a jacket pot?

In a dish with puff pastry over the top served like a pie?

Put it in a frying pan, make wells and crack in eggs. Cook until they go white, sprinkle grated cheese on top and cook under grill. Like Spanish eggs but Ratatouille d'oeufs.

Tin of kidney beans in chilli sauce, some cumin and rice on the side.

Add squashed avocado and lime juice, plus some fresh coriander, maybe some sour cream, for serving.

In our house DH often makes extra ratatouille makes to put in a quiche the next day. Its really nice.

That was quick! Thanks all. There's quite a lot so it will be veggie shepherds pie tonight, freeze the rest and serve with tuna steak another time. Never thought about serving with fish. Great ideas thanks

I use ratatouille as a pizza sauce...hubby has no idea he's enjoying aubergines!

I'd like it with some lovely cod and samphire.
Or add chick peas for veggi option with cous cous.
Also with the eggs as per above.
Or water down adding cooked pasta for minestrone.

Top with a mix of breadcrumbs, grated cheese and oregano. Bake. Nice with duck...or on its own.

Use in place of the tomato in this. Just blend the ratatouille.
