I tried these with small veggie sausages and used sun dried tomatoes to wrap. They weren't terrible, the veggies loved them and the carnivores left them!

Why bother? Make a lovely veggie snack instead - nice falafels or fritters or something amazing with mushrooms.

Quorn do little sausages and veggie bacon. The bacon doesn't take long to cook though so you'd probably have to wrap them afterwards.

You can get quorn cocktail sausages which work well, or couldron sausages which cut up beforehand hold their shape really well. As much as I like falafel it has no place at Christmas (I want yummy unhealthy comfort food!)
