We seem to be stuck on certain meals and need change.Summer is easy but after chilli's,curries, dragon pie and pasta bakes/with sauce/meat ball we run out of steam .
Any ideas for warm winter meals, were not fussy but a bit sick of cauliflower?

There's a thread in Food on this very subject at the moment.

Aubergine Parmigiana serve with rice or cous-cous
Mushroom stroganoff served with rice or mashed potatoes

Read Hugh F-W book Veg every day for some interesting ideas.

Google for 'Leek, carrot and potato pie' from the original Fair Trade cookbook. Simple, seasonal and delicious.

I know it's really old school, but homity pie.
Butternut squash & sage soup.
Shakshuka
Smoky miso marinaded aubergines.
I like to do a traybake of quinoa, various vegetables, herbs & spices. Mayb add some liquid if the vegetables aren't likely to release much. All in a small roasting tin (if it's too big, the liquid from the veg will evaporate before the quinoa cooks). It also works as a stuffed vegetable - marrow, peppers etc. Whatever combination of herbs & spices you fancy, & loads of different vegs work as well. Also, feta, or other cheese crumbled over the top.

Jamie Oliver’s veggie mousaka is a big hit in our house!

This is a lovely recipe. I add half a teaspoon of cinnamon and nutmeg to give it a bit of a kick. I also don’t bother with the potatoes because it’s a faff and it doesn’t bring much to the dish. I serve with garlic bread and Greek salad.

Ooh, if you like butter beans, have you ever tried gigantes plaki - Greek-style baked butter beans, in a tomatoey sauce. Takes a bit of preparation but once they're sorted you just let them cook. Good for summer meals as they usually eat them at room temperature.

I also like fasolakia - Greek-style greek beans in tomatoey sauce. I put carrots in mine, too, just because I like it. This was an absolute staple when I was vegetarian at university. Both recipes really delicious with good bread & butter, or some simple rice or pasta dish if you want it as a main meal.
