Quick dinner recipes needed please

Hi all,

I've recently started a fantastic new job with a less than ideal commute, which means I have less time in the evenings to prepare and cook the meals I used to. DS3 has dinner at nursery but I still need to feed DS7 as he only has a snack at after school club.

Can I please ask for your help with recipes I can knock up quickly or prep the night before? Only real issue is that DS7 is fussy but I'm trying to get him over that. He won't eat pasta apart from spaghetti, rice, or anything spicy.

I have an instant pot so I've been using this both as a pressure cooker and slow cooker, and have been prepping things like stews the night before and using the timer. I do like to cook from scratch where possible.

My other thoughts are:

Shepherds pie
Spaghetti Bolognese
Lasagne

After that I get a bit stuck and don't want to fall into a boring rut.

Can anyone suggest any others that might work?

Chicken stir-fry with noodles
Fresh Gnocchi and sauce
Homemade lentil soup (made in advance) with garlic bread or cheese toastie
Beans on toast is fine I think sometimes
Omlette, scrambled or boiled eggs with tomatoes or mushrooms or whatever they will eat.
Chicken breast from m and s can be microwaved , potato and peas

I've never particularly liked gnocchi - perhaps the texture. Might give it another go. What sauce would you recommend?

Lauryloo - yes I use the good food app a lot, it's great. I'll give it a look and see what I can find.

Just found a nice sausage and butter bean casserole thing which looks interesting. Might give it a try tonight and serve leftovers tomorrow if it works out.

Might have to try batch cooking again, when I can get the freezer down Grin

Quesadillas are really quick & easy. You can put whatever you fancy in them. DS likes ham & cheese.
