Exciting salads. Is there such a thing?

Tell me you most lovely salads please - nothing too fatty or oily as it'll play havoc with my stomach and I'm trying to lose a few pounds anyway.

I do like salads a lot, but god I'm bored with my usual chicken salad!

My fav at the mo is blanched cauliflower, peppers, red onion and mushrooms, all spread on a baking sheet with a sprinkling of curry powder, rock salt-and nigella seeds, sprayed with oil and put in a hot oven. Served over baby spinach and pea shoots (raw). Leaves dressed with mango vinegar. Optional chicken tikka pieces or peanuts for protein. Splatter on a bit of fat free yoghurt. A couple of crushed tortilla chips sprinkled over the top at the last minute for crunch.
