How do people carve such elaborate ones? Genuinely how? What do you use to carve? And do you have templates or something?

This is DH’s. I have absolutely no artistic talent. The kids choose a design off the internet. DH then sketches it freehand onto the pumpkin. He thins it down a lot from the inside and then carves it with a scalpel.
