does the inside of pumpkin keep?

Google didn't help me so...
We have a big pumpkin to carve. I would like to make something out the flesh we scoop out, but all the recipes I have found use ingredients we don't have and shops are a lengthy walk away with 2 miserable DC.
Can I take the insides out and keep them until tomorrow or Friday when I have chance to get to other shops? In the fridge? Any tips to keep it fresh enough?

Cut the flesh into chunks and freeze it loosely.
