I would use it towards a city break - to Dublin!
Or buy a lovely piece of jewellery, depending on why I have £500 to spend on myself.
I would like either a memory (travel) or a longterm keepsake which I could wear forever

The big lego Hogwarts castle. And the time to build it with NO-ONE else around. Well, I suppose DH can come and see the really cool/ clever bits. I'd probably have some money left over, could spend the rest in waitrose buying snacks to accompany the building.
