Which cheese do you use to make cheese sauce?

I just made some for the first time and I used shredded cheese. But it didn’t melt, and I think I added too much milk. The sauce was very liquidy. With bits of cheese in it… Not so nice… Also, how long do you leave the cheese in for? I’m doing this on the hib

Try Delias all in one cheese sauce on bbc. Plus buy real cheese! Why would anyone buy that orange plastic grated crap! - if you have a disability then use a motorised grater.

What cheese to use depends on what the sauce is going to be used for.

All cheese melts when heated and I've made cheese sauce using cheddar, stilton, wensleydale, edam, gouda, manchego etc, or a combination thereof, and monterey jack is special favourite.

As I can't be arsed with the amount of whisking needed for the all-in-one method, I make a bechamel/white sauce the traditional way before adding the cheese/s.

Whatever cheese, or cheeses, I'm using I always add parmesan and 2 teaspoons of dijon mustard or 1 of colman's to the sauce.

If the assembled dish is to go in the oven or under the grill, I sprinkle the top with breadcrumbs or grate additional parmesan over it.
