Argh! They ate the cornflakes! Now what?

Ds's birthday today. He asked for Cornflake Chicken for supper, ie chicken breasts 'breaded' with crushed cornflakes and baked. But the cornflakes have been eaten! What can I use instead?

I really don't want to fry, and skinless chicken breasts need frying, or at least coating in something before baking.

(Bloody teenage bottomless pits HmmGrin)

Plain flour, garlic salt, paprika and cracked black pepper. Mix all together in a bowl. Coat the chicken in that and fry.

Breadcrumbs IMO are only good fried. I tried baking breadcrumbed chicken once. Awful - dry.

I can see Doritos being a good substitute - but I have none.

Ooo I bet if I tossed the rice krispies in seasoned oil before coating, they would be really good. But would they stick to the eggy chicken?

Oh I’m obv too late for dinner but yes rice crispies work. I’ve got a Lisa Faulkner recipe for them - roll the chicken in a little mayo, semi crush the rice crispies with some salt and pepper and cover the chicken with it. It’s lovely! I use Greek yogurt instead of mayo though.

I can report that Rice Krispie Chicken is now joining Cornflake Chicken as a dc's favourite. Smile

I mixed sweet paprika, smoked paprika, salt, pepper, crushed garlic, honey and sunflower oil into a bowl of rice krispies. Beat the chicken, floured and egged it, then pressed the rice krispie mixture all over it and baked it.

It was good. Really really good!

Thanks for the rollng in mayo tip - I'll try that next time. I'm sure mayo will be less messy than flour and egg.
