How do you do omelette?

Do you beat the eggs, mix all your ingredients together and fry them as one?

Or do you beat the egg, fry the egg like an egg pancake, then put your ingredients on top then fold it?

Or do you do it sort of like scrambled egg with tasty extras?

Mix the eggs, but really lightly.

Cook them by pouring into pan, pulling it away from the edges as it cooks and swirling the uncooked egg into the spaces.

Put filling on top, wait until it heats through, fold in two and roll onto the plate. Smile

Big knob of butter in the frying pan.
Whisk 2 or 3 eggs in a bowl add salt and pepper.
Once butter melted, pour in the eggs and make sure they fully cover the pan.
As the edges start to cook, sprinkle grated cheese.
Give it a minute.
Flip half of the omelette onto the other half.
Give it a minute.
Flip the whole thing over.
Give it a minute.
Done.

Use 4 eggs and beat. Separately fry whatever, eg mushrooms, chicken, ham, peppers. Add egg mixture to a frying pan with some melted butter, cook for short while, add other stuff then put the whole thing under the grill for a minute or so on high

I use 2 eggs and dash of milk, plus s+p, fry other ingredients first eg mushrooms, pour whisked egg over the top, then add grated cheese cOOk for around 2 mins then pop under grill.

You have to get the butter foaming before putting in the eggs and use a stainless steel pan.

I fry the 'contents' of the omelette first in butter, then add the lightly whisked eggs. Depending on who I am feeding will depend on How many eggs.

Gently life the sides, so I can run off the egg mixture.

When nearly done, I grill it, then add grated cheese and grill it some more.

Slide out of the pan and fold it as I put it on the plate!

OK, bit radical here but this happens to be the way I like omelettes. I separate the white from the yolk of the eggs, add a wee bit of water to the white and whisk until foamy (not quite meringue like but you get the idea). Mix in the yolks, fry in butter (if it has contents, fry these gently first, if cheese grate on during frying). I like my omelettes fluffy Grin

I add a bit of water to the beaten egg. Makes the omelette lighter I think
