Almond free marzipan?

Does anyone know if you can buy this anywhere? Or can anyone recommend a recipe (preferably one that tastes similar to/ has a similar texture to real marzipan)? I want to make a Christmas cake but have developed a (non life threatening) allergy to almonds.

Can you make it yourself using cashew nuts or another nut, pistachio, pecan, brazil as a substitute?

A friend of mine doesn't like almonds so she makes walnut marzipan. Tastes delicious.

Howmanysleepsnow Hers is from a very old recipe book but she says this is pretty close. Don't overwork it!

Never tried walnut but sounds as though it might work really well.

Very easy to make your own. If this is an allergy that has only just come on I would perhaps exclude all nut products.

My DMIL had a wartime recipe for marzipan that used soya flour, she added almond essence but you could use a different flavouring. I may have the recipe some where and could try to dig it out if you like.

I've never made any other than almond marzipan but I reckon you could use any nut instead.

500g ground almonds
250g caster sugar
250g icing sugar
1 egg
Juice of 1 lemon
A good dollop of whiskey
Almond extract

Lightly beat egg, whiskey, lemon juice and extract. I've never seen nut extract other than lemon so maybe leave that out.

Mix dry ingredients together. Gradually add the liquid. Bind with your hands until it comes together but isn't sticky. Amount of liquid depends on moisture levels in nuts.

I reckon if you were using ground hazelnut, you could use frangellico instead of the almond extract. Pistachio, pecan or walnut would be yummy too.

I should add, she continued to use this marzipan substitute for the rest of her life because it was good, if you weren't told it had no almonds you would never know.

I’ve just bought some pistachio marzipan chocolates, the Niederegger brand. Not sure if I haven’t started a new obsession.
