Put in a saucepan with a lot of butter (salt, if the butter isn’t salted), and a pinch of nutmeg, and cook very slowly for about half an hour. My kids will eat pretty much anything if there’s enough butter in it...

It goes well with a roast dinner.

This is nice, made with Savoy cabbage, it's a Jamie Oliver recipe.

I only have 1 out of three children that eats cabbage (one of the others eats all leafy veg except cabbage FFS) but the adults in the house like it with bacon and garlic, or chilli and garlic, or in minestrone.

If you have an old magazine, scissors and a pritt-stick you can glue eyes, a nose and a mouth onto a cabbage and leave it in the fridge to freak out your OH.

Alternatively, heat butter or oil in a pan, add onions and garlic, cook slowly until softened, add shredded cabbage and cook for a few minutes, add enough vegetable stock to cover, stick a lid on the pan and simmer until it’s cooked.

If you're feeling adventurous and there's people in your family who'll eat spicy food, you can make kimchi from green cabbage:

DH won't eat cabbage the normal way but loves it stir-fried in sriracha or fermented into sauerkraut or kimchi.

May not work for the kids though!

There is a great polish dish that combines ribbons pasta with fried cabbage and onions, u can add mushrooms and ham/bacon.
The dish is called lazanki or haluski.
There are various recipes around, some use a mixture of fresh cabbage and sauerkraut, but u can do fresh only.
It's surprisingly tasty.

Basically u saute/fry the veg etc first and then combine it with cooked noodles for a final stir. Serve topped with a dollop of sour cream if u like.

If you'd like something very easy, leave the cabbage whole, top with a bit of cheese and put it in a microwave for 20 -30 minutes. Putting it into a pre-heated oven at 220C for 1hr 15mins is similar. It's slightly nicer but obviously takes longer.

Cabbage, apple and onion soup with sage and/or rosemary is also nice. My portioning is a bit batty so I can't give exact ingredients but a ratio of 1/2 cabbage to 1/4 apple and 1/4 onion works well. Garlic helps.
Fry everything off with a mere smear of oil, starting with onions/garlic followed by cabbage then apple until all are beginning to soften.
Add oxo chicken stock - 2 cubes per 2 mugs of water plus a little bit of salt and a bit more pepper and a tablespoon or so of ketchup/tomato puree. A splash of sweet sherry is a recommended upgrade.
Bring to the boil then simmer for 30 minutes
Take about 1/2 ingredients out, blend the rest then return ingredients to the pan and cook for another 15
Top with cheese and serve with crusty bread if wanted

Ranch coleslaw:
Shred cabbage, carrots, spring onions and celery in your preferred quantities
Add tablespoon mayonnaise, and cider vinegar and 1/2 teaspoon french mustard and sugar
Mix altogether and serve with pulled pork, bbq ribs or jacket potatoes and cheese

AndromedaPerseus · 01/10/2019 23:40

Also bubble and squeak:
Boil shredded cabbage and peeled potatoes until cooked
Mashed potatoes and cabbage together
Allow to cool
Season with salt and pepper
Fry some rashers of bacon in a large frying pan the remove and fry the cabbage and potato mixture on both sides until brown and crisp crisp in the bacon fat. Serve the bubble and squeak with the bacon rashers

It's really good in soups, it's adds a smoothness. Slice it really fine then throw it in for ten mins
